Chatpate Aloo

Dear Friends,

Are you ready for something amazing? This chatpate aloo is a perfect starter or as a side with any main. You can replace potato wedges or fries with this instead. I can guarantee this will taste much better! The flavours are amazing and because I use homemade spice blend, you can taste the freshness in this dish.  I prepared it for the evening snacks and it was a big hit in my family. You just need potato and few spices to make the most delicious, flavourful spicy potato. It can be prepared in minutes if you already have boiled potato lying around in your fridge.

Preparation Time: 15 minutes

Cooking Time: 10 – 25 minutes depending on if you already have boiled potato ready

Ingredients:
Baby Potato – 8-10
Cumin seeds and sesame seeds – 2 tsp each
Asafoetida – small pinch
Oil for cooking
Amchur (mango) powder – tbsp
Red chili powder – 1 tsp
Coriander powder – 2 tsp
Salt to taste

For Spice blend
Cumin seeds – 2 tsp
Fennel seeds – 2 tsp
Coriander seeds – 2 tbsp
Whole black pepper – 1 tsp
Star anise – 1 to 2

Procedure

1. To make spice blend, dry roast cumin seeds, fennel seeds, coriander seeds, black pepper and star anise in a pan for 2 minutes. Let the roasted spices cool down at room temperature and then grind all the spices in dry grinder to a fine powder. You can make extra spice blend and store it for future use, it will save time when you make this dish next time (I can guarantee you will make this again and again 🙂 ).

2. Wash potato, put a few small cuts in each potato and boil in water until knife can easily pass through. It will take around 10-12 minutes. Do not over boil. You can instead pressure cook for 2 whistle. Let it cool down and remove skin. If potato are slightly bigger, cut them in half.

3. Heat 3 tbsp oil  in cast iron or nonstick pan. When oil is hot, add cumin seeds and sesame seeds. Saute for few seconds, then add pinch of asafoetida and boiled potato. Cook potato on low to medium heat until sides turn golden brown stirring occasionally. Then add 3-4 tbsp of spice blend mix. Add mango powder, chili powder, coriander powder and salt. Mix well and cover with lid. Cook on low for few more minutes until all flavour blends together, stirring every few seconds. Your whole house will filled with the spice flavours and you know you are ready to eat something amazing coming out of that pan!

4. It is ready to serve. Skewer on a toothpick and serve as a starter. I have no doubt that this will be the biggest hit in your next party!!!
