Many of you may know this is the most popular snacks in Gujarati family. It is most famous Gujarati dish loved by all young and adult, eaten during weekend breakfast/brunch.
Preparation time: 30 minutes
Cooking Time: 30 minutes
Ingredients:
1/2 cup water
1/2 cup oil
2 cup besan (gram flour)
1 tsp ajwain (carom seeds)
1/4 tsp asafoetida
Salt to taste
Oil for cooking
Procedure
1. Crush carom seed with mortar and pestle. Shift the flour.
2. In a large mixing bowl, add water, oil, crushed carom seeds and asafoetida. Mix it until mixer thickens around 2-3 minutes. In the same bowl, add besan gradually and continue mixing. Also add salt while you are mixing the flour. Make roti like dough.
3. In a frying pan heat the oil. Make soft ball size balls from the dough. Use slight oil to grease your palm so dough does not stick.
4. There is a traditional way to make fafda but not many people know. This is how I do it. Cover small flat surface with plastic, spread little oil on it and put dough ball on it. Cover dough with another plastic and roll with rolling-pin. Roll carefully to little thinner than paratha thickness. Remove the top plastic, cut from all sides to make it rectangle and then make 4 to 5 straight cuts.
5. Carefully pick up one piece at a time and drop in hot oil carefully. Fry 4 to 5 pieces at a time on medium heat. Fry till both the sides are slightly golden and cooked properly.
6. Remove on a paper towel, and let it cool before storing. You can store this in airtight container for up to 2 weeks at room temperature (of course, if it’s last that long…lol :)).
7. Serve it with Tea/Chai, fried chilies, raw papaya stir fry and mango or gunda pickle. Gujarati also like to eat Jalebi with it.
