Pav Bhaji

Dear Friends,

Pav bhaji is a a very famous street side food of India. Bhaji is hot, spicy and tangy gravy eaten with Pav (dinner rolls/bread).
I have added instant pot version below (thanks to my daughter-in-law)

Start the preparation at least 4 hours in advance if you are using dry green peas. Soak it 3-4 hours and then pressure cook for 4-5 whistle. 

Preparation Time: 30 minutes

Cooking Time: 30 minutes

Ingredients:

Cauliflower florets – 2 cups
Cabbage shredded – 1 cup
Potato cut in big chucks – 2 big/4 small
Carrot finely chopped – 1 cup
Green pepper finely chopped – 1
Onion finely chopped – 1 big/2 small
Garlic crushed – 7-8 cloves
Frozen Green peas – 1 cup
Dry Green peas cooked and mashed (optional) – 1 cup
Tomato puree – 1 1/2 cup
Oil and butter for cooking
Salt to taste
Lemon juice – 2 tbsp
Butter – 1 inch cube
Fresh coriander for garnishing

Spices
Cumin seeds – 1 1/2 tsp
Red chili powder – 2 tsp
Turmeric powder – 1 tsp
Coriander powder – 2 tsp
Pav bhaji masala – 2 tsp

1. Cook cauliflower, cabbage, potato and carrot in pressure cooker with 1/2 glass water. You can also add eggplant with all these vegetables. Pressure cook it until 3 whistles. Once cooker cppls down, mash it with masher.

2. Finely chop green pepper, onion and garlic.

3. In a pan heat the add 2 tbsp oil and 2 tbsp butter and add cumin seeds. In 30 seconds add chopped green pepper and saute for 2-3 minutes.

4. Add chopped onion and saute for 3-4 minutes. Then add crushed garlic to the pan and also add salt. Cook on medium heat until onions are lightly brown around 4-5 minutes.

5. Add all remaining spices, tomato puree and cook on low for 3-4 minute or until oil separates from the mixture. Stir occasionally.

6. Add mashed vegetable mixture, frozen green peas, cooked and mashed dry green peas in the pan. Stir well, add water to adjust consistency. Also adjust salt if you find it is low. Simmer for 4-5 minutes so all the flavors are blended together. At the end, add lemon juice and butter.

7. Garnish with coriander and serve hot with Gluten free/regular Pav/bread or Paratha, masala onion, papad (papadam) and a slice of lemon. I personally like eating this bhaji with rice flatbread.



Instant Pot

1. Turn on SAUTE mode on instant pot, add mix of butter/oil and cumin seeds.
2. Add green pepper and onion and saute for 2-3 mins.
3. Add crushed garlic and tomato puree and spices, mix well.
4. Then add medium sized cut cauliflower & potato, shredded cabbage and finely chopped carrot. Also add 1 cup of water and mix well.
5. Press cancel SAUTE mode and then press PRESSURE COOK mode. Make sure it’s set to high pressure and close the lid. Set cook time to 9 mins and close vent to prevent steam from escaping.
6. Once it’s done, manually release steam by turning the sealing nob to venting.
7. Press cancel. Use masher to mash cauliflower, potato, cabbage and carrots. Then add frozen peas and boiled dry peas paste. Mix well.
8. Press SAUTE and cook for 2 mins, add butter and lemon. Garnish with chopped coriander and serve.
